Cereal β-glucan has various physiological activities and is widely applied in food and other fields. How to quickly,accurately and economically determine β-glucan content has become an urgent issue in cereal industry such as oat and barley. At present,the determination methods of cereal β-glucan mainly contain enzymatic method,chromatographic method,Congo red method,fluorescence method,viscosity method,NIR method,etc. There are differences in their principles,with diversified accuracy,determination efficiency,and cost. Among them,enzymatic method has the highest accuracy. It has been developed into commercial assay kit and has become the standard method for the determination of cereal β-glucan.However,the enzymes with high purity are expensive. NIR method is easy and quick,and is able to detect samples in large quantities,which can even achieve non-destructive testing by using whole grains.However,this method requires a large number of samples with known β-glucan content to establish the quantitative model. This article summarizes the current determination principles,pros and cons,as well as relevant standards for each determination method of cereal β-glucan. |
