In order to understand the status of wheat quality and the genetic and environmental effects on strong-gluten wheat cultivars in lime concretion black soil area(LCBS) of Huang-Huai wheat region, wheat grain samples were collected from five provinces from 2011 to 2013, and the quality characteristics were analyzed. The results showed that the variation degree of different quality indices is different. Among them, the test weight had the smallest coefficient of variation, while the unsound kernel gave the largest variation. Average quality index of wheat grain in different provinces all meet the national standard for strong gluten wheat, of which the sedimentation value in Jiangsu province was the largest, and both gluten index and falling number in Shandong province were the highest. However, quality parameters in different provinces showed different standard-reaching rate, of which, the highest rate was hardness index with 91.4%, while water absorption rate showed the lowest value with 58.7%. For different provinces, the highest average standard-reaching rate was observed in Jiangsu province with 81.5%, while Henan and Hebei got the comparative rate with 75%. The AMMI model was used to further analyze the effects of genetic and environmental factors on grain protein content, sedimentation value, dough development and stability time of wheat samples in different regions. The results indicated that cultivar Jimai 20 had a better stability for protein content and sedimentation value,and Hengguan 35 and Zhemai 366 were sensitive to environment. Similarly, cultivar Xinmai 19 and Zhengmai 366 had better stability for dough development time, and Zhengmai 7698 showed a better stability for dough stability time. For different experiment sites, Weifang and Binzhou had better resolution for dough development time and stability time. |
