      为给改善居民膳食结构、促进中国小麦供需均衡提供科学的理论依据,收集了1980-2013年中国小麦的消费数量、用途与结构等方面的数据,利用描述统计与单变量多因素方差法分析了30年来中国小麦消费的变化趋势。数据分析表明,中国小麦消费总量35年来稳定增长,但人均小麦消费量的变化趋势具有明显的阶段性与城乡差异性;小麦消费的结构变化主要表现为口粮消费比例减少,饲料与工业消费比例增加;小麦消费用途结构体现出了多元化消费与多选择挤出效应同时并存的态势。为适应人们营养均衡、方便快捷的饮食需要,未来中国小麦食品工业应增加预制食品和方便食品的生产,开发营养强化粉和专用粉,以适应多元化食品对小麦面粉质量的要求,这些改变将进一步推动小麦生产供给的结构性调整。
英文摘要:
      As one of the most important food resource, wheat plays a significant role in food security of China. Studying the consumption of wheat and analyzing its trend can provide a reliable data for making suitable policies to realize the balance between supporting and consumption and further to ensure food security in China. Data on Chinese wheat consumption was obtained from FAO-food balance sheet and China statistical yearbook from 1980-2013, and was analyzed by SPSS 12.0 software. The results showed that total wheat consumption in China was steadily increasing over the past 30 years, but the trend of food consumption of wheat per capita was obviously different between urban and rural areas;with the ration of food usage decreased, the rate of wheat for feed and processing increased;consumption structure of wheat reflected the diversification of consumption coexisted with competition with multi-choice at same time. In the future, food manufacturers should improve the production of convenience food made from wheat and tailored flour to cater to the needs of people based on nutrition and health.
