In order to understand the effect of inositol on the development of effect of added inositol in the process of barley steeping on the activity of α amylase, cellulase, protease, phytase and β glucanase in malting barley were studied, and some indicators of maltling barley were further compared. It was found that, added exogenous inositol could improve the activity of hydrolytic enzymes in the germination process and compared with the control the activity of α amylase, cellulase, protease, phytase and β glucanase could be increased up to 38.1%, 7.0%, 12.3%, 68.9% and 20.5%, respectively. The turbidity of wort could be decreased by 63.2%, and the β glucan could be decreased by 17.5%, and the kolbach index of wort was improved. |
