为了解小黑麦、小麦和黑麦三种作物间淀粉粒形态特征及酶解特性的差异,用扫描电镜观察了这三种作物在籽粒灌浆、种子萌发和酶解过程中淀粉粒的形态变化。结果表明,种皮是三种作物籽粒灌浆早期淀粉积累的主要场所,此后种皮淀粉逐渐减少直至消失。在籽粒灌浆过程中,大约从花后6 d,胚乳中淀粉粒开始快速积累,直径变大,小黑麦淀粉粒发育快于小麦和黑麦。在种子萌发和酶解过程中,淀粉粒直径逐渐变小,其表面赤道凹槽和小孔部分更易被酶解,发芽6 d后淀粉粒被水解成两个部分。总淀粉粒的酶解效率和大淀粉粒含量呈正相关。三种作物大淀粉粒比例和直径以及抗酶解性均表现为:小麦>小黑麦>黑麦。 |

In this study, we observed the morphological changes of starch granules in triticale, wheat and rye during seeds development, germination and enzymatic treatments by using scanning electron microscopy. We found that the pericarp tissue was the major site of starch deposition during early seed development. In the endosperm, the starch granules were rapidly accumulating after 6 days post anthesis (DPA). The equatorial groove and pits on the surface of triticale, wheat and rye starch granules were more susceptible to the enzymatic hydrolysis than the broad or flat surfaces. There was a significantly positive correlation on the hydrolysis efficiency to the percentage of large granules in native starch granules. |
